Pleurotus have an easy cultivation and are excellent sources of proteolytic enzymes. The aimed was evaluate the mycelial growth extracellular protease activity ostreatoroseus. mushroom grown on potato dextrose agar (BDA) with yeast extract (YE) 0.5% (w/v). radial velocity (RCV) density occurred different media containing (w/v) YE: Potato Dextrose (BDA), GYP (glucose, peptone), malt (MEA), purple yam (EIR), torn (CEIN), aria (EA). Proteolytic determined by gelose block method. In (VCM) is used: cupuaçu exocarp (CC), açaí (Sac), pineapple (CsAb) sawdust (SER), supplemented rice bran (FA) or wheat (FT) were used. Proteases extracted in sterile distilled water under 180 rpm agitation at 30 °C. Significant RCV observed MEA+YE (12.32 ± 0.10 mm/day). However, showed strong density. substrate mixture Sac+FA (0.61 0.09 cm/day). tested efficient production proteases this mushroom.
